The staff at the ryokan we were staying at said this was their favorite sushi place in Kyoto- even called to make reservations for us. It was maybe 8pm on a weekday, so not too busy, giving us a chance to be interactive with the chefs. We sat at the bar, let the chefs know what we didn't like, and away they went. It was amazing! The food, the ambience, the conversation, and especially the lessons in Japanese -saké sake. Thanks for the wonderful experience!
