There's always a queue so be prepared to wait. It's worth it. The eel has the right crisp and flavour to it. I had the Nagoya version and it was delicious. The Hitsumabushi is the way to go. It comes with instructions on how to enjoy their eel best.
I tried Hitsumabushi Inou in the Esca underground shopping center just outside of Nagoya Station and had the large hitsumabushi. The portion was very generous. Unlike the first hitsumabushi restaurant I tried, here, the nori topped the rice, and was under the eel, creating a layer of umami. The eel itself was excellent... The hitsumabushi was so good that I went back to Inou a few days later, and it was just as delicious. It is possible to get refills on the broth, green onions and wasabi. The restaurant is small and the tables are close to each other, Suitcases (lots of travelers come by!) are kept next to the register.
