龙虾肉是美味的食物,制法是可以白灼、干酪焗,是中国名菜。中国南方沿海也经常用鲜活的龙虾切片后生吃,称为“刺身”。广式海鲜有“龙虾三吃”一说,即龙虾肉分别生吃和熟吃,用龙虾头和外壳熬粥。大龙虾的价格相当高昂,即使在沿海城市,售价往往也达到数千元人民币。咖喱焗龙虾是东南亚常见的菜色;酱爆烹调龙虾更是保留龙虾细嫩的口感,带出龙虾鲜香;龙虾汤炖煮汤汁佐以面条和青菜,在细腻中见美食真意。

花蟹

花蟹因外壳有花纹而得名。花蟹有时专指兰花蟹(远海梭子蟹的雄性个体),但因地域之差异,也有称红花蟹(锈斑蟳)为花蟹,东南亚多为兰花蟹。兰花蟹含有丰富的蛋白质、微量元素等,对身体有很好的滋补作用。蟹,自古就有“四味”之说。“大腿肉”,肉质丝短纤细,味同干贝;“小腿肉”,丝长细嫩,美如银鱼;“蟹身肉”,洁白晶莹,胜似白鱼。花蟹含有大量人体必需的蛋白质、脂肪、磷脂、维生素等营养素,营养丰富。
